Given that the rear mudflap is pretty much integrated with the entire rear of the bike where did you decide to cut it? I'm planning to hack mine off and I am iffy on where to start cutting.

You should be able to get them almost anywhere: Home Depot, Lowes, Ace Hardware, or any local hardware/electric supply store... There are also online suppliers: http://www.rapidonline.com/productinfo.aspx?&tier1=Cables+%26+Connectors&tier2=Connectors+-+Single+Pole&tier3=Splices&tier4=Tap%2c+blade+and+fuse+splices&moduleno=63979&catRef=33-0190&utm_source=AffWin&utm_medium=Affiliate&awc=1799_1277215070_368fd1efc13553863a9d88dab6f5b87b

BUT you can use almost anything to splice your cables: wire nuts, butt splice crimp connectors, etc. You could just twist them together and cover them with electrical tape (not recommended) -- anything to make a connection. Just make sure you end up with clean, solid connections and a presentable splice solution :)
